Transporting Fat: Albumin

Fatty acids released from adipose tissue are transported by the plasma protein albumin. Albumin is synthesized in the liver and is the most abundant protein in the blood. Each albumin molecule can carry seven fatty acids. Fatty acids bound to albumin can be taken up by muscles or other tissues to be used for energy, or by the liver for energy or conversion to other molecules, such as glucose.
