Transporting Fat: Lipoproteins

Chylomicrons belong to a class of particles known as lipoproteins. Lipoproteins have a monolayer of phospholipids as an outer shell, creating a hydrophobic interior. In contrast, cell membranes with a phospholipid bilayer, create a hydrophilic interior.
