Fat as a Molecule

Fat is a class of compounds belonging to lipids. Lipids are insoluble in water but soluble in organic solvents such as ether, chloroform, and acetone. The group includes molecules with a wide variety of structures and functions.

In addition to fat molecules, the lipids include phospholipids, glycolipids, cholesterol, and fat-soluble vitamins.
